Healthy Chocolate Pudding for Your Sweetheart

Making Dinner for your sweetheart this Valentine’s Day?  This is one of my favorite recipes.  It might sound strange, but try it before you knock it down.  This recipe also tastes better after sitting in the fridge overnight, but it is perfectly good straight out of the food processor.

What’s vegan, dairy free, gluten free, low glycemic, chocolate, creamy and amazing?  What if you could eat a thick chocolaty pudding that’s actually good for you?  Here’s a simple recipe for when you are craving a decadent desert.  If you are trying to bring some health into your house, make this without telling anyone and see if they notice any difference.

Ingredient List:

  • 2-4 ripe avocados
  • 1-3 Tablespoons of raw cacao powder
  • 1/4 cup raw agave nectar (low glycemic) or Raw Local Honey (not good for diabetics)
  • A few drops of vanilla extract (optional)
  • 1 Teaspoon of cayenne (optional)
  • 1/4 Cup of Goji berries (optional)

puddingIt’s very simple.  In a food processor (you can get away with a blender if you don’t have a food processor) put the avocados (peeled and de-stoned) and the rest of the ingredients.  Mix until thick and creamy.  Adjust the sweetness and the chocolate for taste.  If you are using a blender, please don’t put your finger in a running blender to check the taste :-)

Scoop it out and fold in fruit or berries if you wish.

Note: You can find raw chocolate powder and agave nectar at Nature’s Temptation as well as Ridgefield Organic’s.  I’ve also noticed agave nectar made it’s way into Costco.  It’s important to note that raw chocolate powder is NOT the same as baking powder and is not processed.
